In 1890, a legendary pizzaiolo by the name of Rafaele Esposito created a series of pizzas to celebrate the unification of Italy. One of them was topped with basil, mozzarella and tomato, in order to represent the colours of the flag of Italy. In the UK, we often forget that basil is a fundamental part of a pizza Margherita. To that end, as well as using fresh basil, we add a basil purée, in order to accentuate one of the fundamental flavours of this classic - and it’s topped with Gran Moravia, a delicious vegetarian hard cheese.
